Stuffed with a chive- and ginger-laced chicken mixture, the tissue-thin bundles are steamed until tender. Resting in a racy blend of rice vinegar, soy, chile, and more ginger, these are a raucous fete for your mouth. They come just four to a plate, so be savvy and request two orders.
